Name Strawberry Cheesecake (As featured in the February edition of Ama Kiwi Magazine)
Ingedients 1 Packet Tennis Bescuits (crushed and mixed with 100g margarine or butter).
Press into a tart pan and microwave for 1.5 minutes on high. Let cool.
1 can Condensed milk
60 ml Lemon Juice
250 ml Fresh Cream
1 container plain fine cottage cheese (not chunky)
1 container strawberries (FRESH)
25 ml gelatine dissolved in 1 cup water. As soon as it is clear, microwave on high for 30seconds. Let cool.
1 packet strawberry- OR red jelly, dissolved in 200ml boiling water. Add another 200ml cold water. Let cool.
(Prepare the jelly and gelatine first so that it can cool down)
Directions 1. Cut up around three quarters of the strawberries in small pieces. Leave the rest for decoration.
2. Mix the cottage cheese, condensed milk, cream and cooled-down gelatine liquid. Add the lemon juice last.. Mix in pieces of strawberry.
3. Pour mixture over cooled-down crust in pan.
4. Decorate with left-over strawberries.
5. Pour red jelly over and let it set in the fridge.
